I have been buying rabbit for years because it is such good value for a free range meat that has not been kept in a cage and fed on a diet of growth promoters and antibiotics. Plus it is low fat. Rabbits do a lot of damage to crops which in turn increases the farmers costs which are then passed onto us. More than one farmer has lost his life due to rabbit burrows collapsing when driven over with a tractor causing it to fall on to the driver. The avarage price I pay for a fresh Lincolnshire rabbit is £2. For that you get enough to feed 4 people. It comes already skinned and gutted so no gory bits for the more squeamish amonst us. Casserole it with dijon mustard and cider and serve with creamy mashed potatoes. Absolutely delicious.
